Axis Deer Pan Sausage?
We had our axis deer made into pan sausage. After the first batch, we noticed it was missing an ingredient. So we mixed some jimmy dean natural hot pan sausage with it. it still tastes bad. What can we do to make the pan sausage edible. It have very little fat and not enough seasoning. We had processed where we get our deer sausage and summer sausag processed and they turned out great. HELP have 44 pounds of this stuff

See if your butcher can sell you some pork fat. When we make sausage we add 5-10% pork fat to the amount of meat. You may also need to add more seasonings. Regrind the meat with the new fat and seasonings to be sure it is mixed well. There are a lot of recipes for sausages on foodnetwork.com Alton Brown has a few as Emeril too.
