Fishing Fillet
What kind of sauce should I make for the fish fillet I have in the fridge?

I have a nice size piece of fish (pickerel or cod) and I am looking for a fast sauce to make for it for dinner tonight – something quick and easy made with common household ingredients (I am not going shopping)

Bechamel Sauce

Cook together two tablespoonfuls each of butter and flour, add two cupfuls of white stock and cook until thick, stirring constantly. Season with salt, pepper, and grated nutmeg.

Season Drawn-Butter Sauce highly with chopped pickle, curry powder, and tarragon vinegar.

Creamy Dill Sauce

1/4 cup mayonnaise
1/4 cup nonfat plain yogurt
2 scallions, thinly sliced
1 tablespoon lemon juice
1 tablespoon finely chopped fresh dill or parsley
Freshly ground pepper to taste

Combine mayonnaise, yogurt, scallions, lemon juice, dill (or parsley) and pepper in a small bowl and mix well.

Baked Fish with Sauce

1 lb. fish
2 lg. onions
2 carrots
1 lg. can tomato sauce
1 lg. can tomatoes
3 celery stalks
2 tsp. parsley
1 clove garlic
1/3 c. oil
Pepper to taste
Lemon juice to taste
Salt to taste

Thinly slice the onions and carrots, chop the celery and mince the garlic. Fry onion and garlic in oil until soft. Add other ingredients except fish and cook 2 to 3 hours on moderate heat. Put fish in casserole dish and sauce and bake 10 minutes at 400 degrees.
