What is your favorite brand of knife?

What is your favorite brand of chef knife, and reasons why please?

I use Henckels 4 star professional series. They are just the right weight, perfectly balanced in my hand, keep their edge very well if you look after them. I’ve been using mine for year now and it’s perfect with regular honing (not sharpening, I’ve never had mine sharpened).
