Sharpening Steel

Where can I buy carbon steel Sabatier cooks knives, NOT Stainless steel?

I would like a set of carbon steel cooks knives such as the French made Sabatier.
These knives need care or they will rust if not dried properly.
Carbon steel knives will sharpen better and keep their edge longer than stainless steel.
Do you know a supplier in the high street or on the net.
