How often should I sharpen my Global knife?
I am getting a Global knife soon and I plan to use it about every other day. I’ve read that I need a ceramic/diamond honing rod and a ceramic whetstone. Could someone please explain how often I should sharpen with these items and why I need (or do not need) both of them?
Many knife manufacturers recommend both a stone and a rod to properly maintain your knife. Stone sharpening is the best way to sharpen a knife and get a really good edge on it. However, to maintain the edge, you can use a rod in between stone sharpening. Some people use the rod each time they use their knife, but this is, of course, a matter of personal preference.
For those who aren’t accustomed to or comfortable sharpening with either a rod or a stone, you may consider getting a gadget that will sharpen both sides of the blade with a single swipe. There are many on the market. They are available in both diamond and ceramic. Here are a couple that I’ve found:
